I would recommend just using the multitude of already available resources on the internet.

It is not hard to get into the game, and as such a lot of the 'learn to play' stuff could be tackled there if it is needed at all.
I honestly have not seen a emu server with any form of player tutorial since 2002/2004.
As an advertising ploy a video on Youtube is a great idea, but not something that I can see to be required as if they have played WoW or any other modern MMORPG, figuring out UO is not all that hard.
Fact of the matter is a lot of younger people who may of never played UO would be put off by its high tech graphics.
Creating such videos would not be hard though,
Bandicam, Fraps, or any other screen recording software could achieve this, then you can just dump it into windows media editor to touch it up.
I might have a crack, I don't know.. never really recorded much of games etc.
